Today's Ingredients I'll admit that I've never given lentils a fair shot. They're just not something I typically think to buy at the grocery store. However, I've been bored with my meal prep lately. I mean, there are only so many times I can get away with rice, chicken, and veggies every week. So when I came across this particular recipe, I thought, "Why not?" For one thing, I'm a sucker for anything with portobello mushrooms. Plus, it's meatless, which is how I like to eat at least once a week to break up my carnivorous habits. And I can feel myself getting a little sick (ugh), so having an easy stew I can sip on will be clutch. Allowing lentils to soak in water for a bit before cooking them can reduce antinutrients such as trypsin inhibitors and phytic acid, which can prevent your body from absorbing nutrients.
