A classic potato salad to feed all your friends

We love a fancy dish and all, but sometimes it's tried-and-true recipes (like this classic potato salad) that bring the most joy. Best known as a sidekick to BBQ superstars such as ribs and wings, potato salad actually works as a one-pot main dish too — thanks mostly to the addition of eggs, which bring protein and other essential nutrients to the table.

Often dismissed as starches without much nutritional value, potatoes are rich in vitamin C and potassium. How you prepare your potatoes matters (we're looking at you, french fries and chips). Potatoes can absolutely be included as part of a healthy diet, but be mindful of portions, especially if you have diabetes.
