Today's Ingredients Last night, I made what was probably my thousandth chili, and it was a good one. I've perfected the recipe over the years by adding a little dark chocolate, a dash of red wine, and most recently a bay leaf and a little lime pickle. It is in no way authentic, but it works! So this week, I'm sharing a basic recipe, and I'd like you to tell me what you'd add or remove to make it a champion chili. When that chili craving hits, this easy Instant Pot beef chili delivers. Browning lean ground beef creates deep, meaty flavor, and the combination of chili powder, cumin, and crushed tomatoes packs a spicy-savory punch. Cumin brings anti-inflammatory benefits along with its earthy, aromatic flavor. Pinto beans are rich in both vitamins and antioxidants, and their protein and fiber help make each bowl so filling and satisfying. (And heads-up: They don't have to be pintos. Feel free to swap in any of your favorite beans.) As the chili bubbles away in the corner, you'll have time to prep fresh sides like the lettuce and avocado salad.
