All you need to do is combine the salsa ingredients with the chicken (totally fine to swap in breasts instead of thighs, if you want), and all the flavors will meld together in a quick 20 minutes. Cilantro-lime quinoa replaces rice, which means you'll consume more key nutrients such as protein, zinc, and fiber.
