Today's Ingredients Cream-based soups do NOT get enough love. Don't get me wrong: I love a brothy soup, but there's something about thick, creamy soups that feels *extra* filling and satisfying to me. For this week's recipe, I'm bringing my adoration for rich soups to you. Hope you enjoy this one as much as I do! If your answer is "years ago" or "never," same here. So when I stumbled upon this recipe, I thought, "Switch things up, Kenny!" After you've let the leeks and aromatics saute for about 20 minutes, the salmon will only need another 10 to cook. You'll be ready to eat in just 30 minutes! FYI: This recipe calls for 12 cups of broth and 4.5 cups of light coconut milk, which is definitely a lot! I'm probably going to substitute some for full-fat coconut milk instead because I prefer the taste. Yes, full-fat coconut milk does contain a high amount of saturated fat. But I think a blend will provide a healthy balance while still providing a satisfying flavor (IMO, at least!). Feel free to swap in other stocks, broths, or milks depending on what interests and/or delights you. Get the recipe!
